Chocolate Banana Bread

Lots of “How To Write A Successful Blog” posts say that at first you will feel like you are talking to yourself. I know a handful of really wonderful people have read every post, so that’s good enough for me, and thank you to them! This is the first recipe I have written myself, or memorized bits and pieces from other recipes until it tasted good. I also took a different approach to taking these pictures.

Chocolate Banana Bread

1 stick of butter (softened)
1 cup of sugar
2 eggs
3/4 cup of yogurt (any flavor, I used strawberry)
1 teaspooon vanilla extract
3 really ripe bananas
1 1/2 cups of all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 to 2 chocolate bars (any flavor, the best I’ve used was dark blackberry ginger)

Preheat your oven to 350 degrees. Grease 2 regular size bread loaf pans. Soften your butter in a microwave safe bowl on high for about 30 seconds. Add all your dry ingredients and stir. Add in your wet ingredients and stir.

Next add your bananas. I typically just add them whole because they are so overripe by the time I use them they mash into the batter without an issues. If your bananas are not overripe you may want to mash them in a separate bowl, and then add them to your batter. I mash my bananas with a potato masher! But I fork works just as well. Chop your chocolate into little tiny chunks and slivers, and fold into your batter. You can use chocolate chips but I like the way a chocolate bar sort of melts into the loaf, giving an overall chocolatey flavor. Equally divide into your pans and bake 30-35, or until you can insert a toothpick into the center and it comes out clean.
