Matt and I are currently on a pancake binge. Well I don’t know if Matt is really as into this binge as I am, but he’s eatin’ them! I created a fluffy, but moist pancake by using regular pancake mix but adding in about 1/3 cup of greek yogut, and a spash of milk. The batter is pretty thick, but so friggin’ delish! I plop down a pad of butter to make it real crispy on the outside, occasionally add in some chocolate chips or pear sauce, and BAM! Best CAKE out of a pan EVER!

There is real joy that comes out of flipping a giant pancake. I love pushing the limit and baking a pancake almost the size of the pan.
